This course is for those using the Traditional Food-Based menu planning system. Detailed instruction on properly completing Food Production Records (FPR) for the purpose of forecasting future needs, as well as required federal and state documentation, will be provided.

Target audience: Directors, Supervisors and lead Production Staff.
