The Arkansas Archeological Survey has created a really great curriculum called "Gathering, Gardening, and Agriculture" (https://archeology.uark.edu/gga/) that explores the long history of plant domestication in Arkansas using interdisciplinary subjects to introduce students to the science of archeology.
We have also recently developed a "Raw Materials" discovery box for teachers to borrow that includes plants, animals, and minerals found throughout Arkansas as well as examples of the products that people have made from those materials throughout Arkansas history (both pre- and post- European contact). This is meant as a way for students to interact with these materials to think about how people lived in the past, the natural resources that they used, and the things that they created/invented.
