Food Safety Basics and Norovirus for Schools (Child Nutrition Pre-Conference)

The Institute of Child Nutrition (ICN) developed this session for new school nutrition staff – this curriculum is designed to provide a basic understanding of food safety. The lesson covers food safety and why it is important, methods for training school nutrition staff on food safety, how to prevent foodborne illness, and checklists to monitor food safety. The course will also focus on the norovirus; its prevention and control strategies. It is estimated that more than half of all food-related outbreaks of illness are caused by norovirus. This training includes participant interaction and activities.

This session is intended for Child Nutrition Managers, Food Service Assistants, and child nutrition personnel at contracting entities that are currently participating in the National School Lunch and School Breakfast Programs.
